Watermelon/Tomato Gazpacho
The perfect mix for summertime!
Start with a big bunch of homegrown tomatoes and a ripe watermelon. Slice up both and then blend lightly: Three parts tomato to one part watermelon. 3 cups to 1 cup is a good start.
Add finely diced ingredients to the blended result:
½ of a large cucumber
1 clove of garlic
½ small red onion
1 seeded Fresno chile or similar (medium hot)
Kosher salt/pepper to taste
2 tbsp lime juice
1 tbsp red wine vinegar
Blend again, lightly for a more chunky and textured result.
Pour into a serving bowl or pitcher, add one more cup of small cubed watermelon pieces and stir in. Garnish with the rest of the cucumber, and a bit of onion, both finely diced.
